Japanese Cuisine Chef job description

Objectives of this role

• Create delicious meals, appetizers, sides, and desserts
• Manage kitchen staff while fostering a strong sense of teamwork and minimizing conflict
• Maintain high standards for our food and equipment, helping us determine what needs to be ordered or repaired
• Create and prepare new menu items or specials, as needed
• Take our menu and reputation to the next level by leveraging your expertise, industry knowledge, and culinary creativity

Responsibilities

• Analyse the menu and oversee kitchen setup and ingredient prep, delegating tasks as needed
• Oversee kitchen operations, ensuring that everything runs smoothly and customers receive their food in a timely manner
• Cook entrees and prepare other menu items such as appetizers, salads, dressings, sauces, and desserts
• Ensure that food is unspoiled and kitchen equipment is functional, ordering supplies and restocking ingredients as needed
• Train new kitchen staff in operations and techniques, providing leadership, guidance, and instruction
• Oversee the cleaning and sanitizing of kitchen equipment and workstations
• Involving team members recruitment and hiring
• Conduct and review training such as Orientation, On Job Training (OJT)
• Monitor team members’ training progress and performance evaluation

Skills and qualifications

• Advanced knowledge of cooking and food preparation techniques
• Excellent communication skills and enthusiasm for teamwork
• Familiarity with a range of kitchen equipment
• Comfort studying a recipe, determining appropriate steps, and delegating tasks accordingly
• Strong leadership skills and an ability to provide clear instructions to other members of the kitchen staff
• Certification relevant to state or country of employment, such as a food handler certificate
• Monitor, manage and improve the efficiency of support services such as Marketing, HR, Accounts and Finance.
• Facilitate coordination and communication between support functions
• Plan and conduct monthly outlet meeting with target and action plan
• Monthly outlet performance analysis and audit, analysis and action plan
• Outlet sales budget (or target) management; and management of KPI’s
• Outlet cost control: Labour cost, food cost, operating cost; e.g Utilities. Disposable products and others
• Handling customer feedback, complaint and comment in a professional way
• People Management

Preferred qualifications

• Culinary degree or on-the-job experience
• Experience in a managerial position
• In-depth knowledge of food safety and sanitation regulations
• Familiarity with the restaurant industry and the latest industry news
• Strong sense of culinary creativity
• Experience cooking with diverse ingredients
• In Japanese Cuisine at least 10 years’ experience

Head Chef duties and responsibilities

The exact duties of a Head Chef depend on the size of the establishment they work for. Head Chefs who work in a smaller environment often have a more hands-on role and may need to tak· Responsible for food preparation, maintaining the kitchen equipment and utensils at utmost cleanliness and hygiene.

· Prepares and cooks according to standard operating procedures set by the company.

· Ensures consistency in taste, quality, quantity, temperature and presentation of each food served.

· Quick in food preparation and is able to cope with a fast-paced kitchen environment.

· Ensure minimum wastage in food preparation and washer duty.

· Ensure freshness of food ingredients and raw materials, keeping track of old and new items by rotating stocks.

· Clean food preparation area and kitchen equipment to ensure clean safe food handling practices.

-Monitor food stock and place orders

-Maintaining hygiene & cleanliness in all cooking areas and wash workstation at the end of the shift

-Any other ad-hoc assignments as required

Job Requirement

-At Least 2 Years of Kitchen Experience in Japanese Cuisine in Donburis & Sashimi

- Experience in Food Management and Hygiene Environment Management

-6 Working Days per week with the ability to work weekends/public holidays
