Role Description

This is a full-time on-site role for a Duty Manager position at Mondrian Singapore Duxton. The incumbent will be responsible for overseeing daily operations and ensuring guest satisfaction. They will handle guest inquiries and resolve any issues that may arise. The Duty Manager will also manage the front desk and supervise the team, ensuring smooth operations and excellent customer service.

How your day looks like?

• Take ownership and responsibility for Duty Management shifts

Job Purpose

Reporting to the Director of Food & Beverage this position is responsible for the organisation, planning and directing of overall daily food & beverage operation and administration of the department and be responsible and accountable for its profitability and revenue generation.

Primary Responsibilities

• Ensure that your team delivers quality services, both in production of customer service at all points of sale in the hotel.
• Ensure the correct operation of the various services in your department.
• Effective leadership of all Managers in the division.
• Motivate and create a team spirit in all sections of the Food & Beverage.
• Ensure that the profitability of your department is consistent. Be involved in the pricing policy of your departments.
• Ensure that the health and safety regulations are complied with and applied in the department.
• Ensure that there is compliance with the work legislation in Food & Beverage Department.
• Engage and obtain guests’ feedback during operations to ensure satisfaction
• Handle guests’ complaints and comments tactfully and efficiently

Team Management

• Draw up and or check the work schedules for your teams, taking into consideration all forecasts and workloads i.e. holidays and off day’s etc.
• Ensure that new hire induction and required trainings are completed within three months of employment
• Provide training to team members and casual labour on all aspects of banquet operations according to the requirements in the department’s Standards
• Observe, coach, motivate and counsel team, disciplinary actions if required
• Respond to all questions raised by your team in the area of personnel management
• Maintain department communication logbook and update notice board.

Responsible for ensuring timely & accurate financial reporting according to accounting standards and in line with the Hotel’s policy & procedures.

• Ensure smooth operation of the Front Office
• Be responsible for directing, coordinating, and monitoring the overall Front Office operation as directed by Executive Assistant Manager/General Manager to meet the service standards of the Hotel
• Contribute to guest satisfaction by providing a high standard of service in line with norms and procedures through TRUST YOU and Key Performance Index set by Accor
• Assist Front Office Manager with projects related to Front Office as and when required and meeting up with datelines
• Identify personnel development to have trained and qualified staff to consistently maintain and increase the Hotel’s service
• Take charge of the ACDC program and work closely with Front Office Manager
• Work with the Director of Sales and Assistant/Reservations Manager and take full control of the Front Office operations in the event of overbooking, should the need to transfer guests to other hotels

The position assists the Restaurant Manager in supervising the overall operation and service standards of the outlet to meet and exceeds guest’s dining experience expectations.

Main responsibilities include, but are not limited to, assisting the Restaurant manager in creating a Food and Beverage destination within Raffles Hotel Singapore, maximising revenues, achieving financial and quality targets, marketing, confirming required staffing levels, conducting training and development of team members.

• Works closely with the manager to forecast sales, covers and payroll costs.
• Supervises the daily operation and ensures sufficient manning coverage for operations.

• Is present in the operation during all meal periods.

Marketing Plan and Revenue Management

• Comfortably and confidently answers questions and attends to queries or feedback regarding the restaurant.
• Makes recommendations to the manager on other potential sources of revenue e.g. promotions etc.
• Works closely with the manager to implement appropriate and effective measures to improve control of costs, expenses, and labour.
• Submits monthly sales analysis with improvement action plan.
• Uses revenue management tools to generate reports.
• Ensures all reports generated are accurate before submission.

Training, Learning and Development of the Team

• Conducts regular on the job trainings for colleagues to develop their skills and knowledge.
• Records and submits monthly On-the-Job Training hours to Food & Beverage Office before the 15th of each month.
• Guides the departmental orientation for new hires.
• Ensures that colleagues are aware of hotel rules and regulations.
• Ensures that colleagues are trained on fire and safety, emergency procedures and hygiene.

Other Responsibilities

The Assistant Boutique Manager is to assist in managing the day to day business of the retail shop, achieving all performance targets and goals as well as by leading the team to ensure high level of guest satisfaction maximizing margins. Assist to develop merchandise to optimize profitability, develop innovative ideas, plans and assist to maintain statistical and financial reports.

Primary Responsibilities

• To work closely with the Boutique Manager to achieve optimal revenue, set targets, forecast and budgets for Boutique
• To support induction and trains Retail Associates in sales, revenue, technical and product knowledge skills.
• To manage retail floor team in day to day operations for Boutique and ensuring consistent high customer service level and seamless shopping experience for customers.
• To review with Boutique manager allocation and control of Boutique’s expenses.
• To work with Boutique Manager in merchandise development and curating consignment brands
• To maintain and control well balanced stocks levels in the Boutique
• To support Boutique Manager in managing all online queries, orders, deliveries and communications for Boutique especially during peak and festive seasons
• To work with Boutique Manager to empower Boutique’s team with consistent customer service skills, hotel communications and product knowledge via training and daily store briefings
• To work with Boutique Manager to review and analyse ways to move slow moving merchandise and maximise on fast moving, best seller merchandise for both in store and online. To ensure gourmet merchandise with near expiry dates to be cleared and minimise cost for write off
• To support in monthly inventory stock takes together with Finance team
• To work with Boutique Manager to ensure safe working practices are followed and adhered to including emergency procedures
• To champion and lead festive season hamper production and operations working closely with Boutique Manager and Boutique’s team.
