ESSENTIAL DUTIES AND RESPONSIBILITIES

• Maintaining the entire kitchen operation

• Preparing hot and cold dishes and executing requests based on required specifications

• Assisting in the planning and development of menus and recipes

• Supervising, training, and developing staff and ensuring consistency in work performance

• Ensure quality control and presentation of the food

• Ensuring proper handling and storage of all food items in accordance with the Company standards and sanitation regulations

• Maintain a planned food cost

• Assist in cleaning duties

REQUIREMENTS

• 4-5 years of related experience

• Assist Sous Chef in charge in the proper running of his assigned kitchens.
• To organize and prepare dishes related to the assigned kitchen, mise en place for buffet and a la carte menus. Check on the production level according to the business needs.
• Ensure quality and quantity standards are met.
• To check all equipment’s are in good working order and if necessary report to the Sous-Chef. Prepare any necessary work orders for engineering team.
• To assist in cleaning up the refrigerator, set up the work station for the day and work with stewarding in general cleanliness, sanitation.
• Ensure proper work practices at all times, to check on personal hygiene, clean uniform, sanitation and cleanliness of the work station.
• Regularly check on the food to prevent contamination.
• Oversee the day to day business operation as instructed, maintain good quality, sanitation and cleanliness standards.

Our client is a Japanese restaurant with a specialization in Italian cuisine. They are actively seeking for a Sous Chef to join them.

The Responsibilities:

• Set up and handle all stations in the kitchen in daily operations
• Ensure the freshness of ingredients
• Check and prepare sufficient mise-en-place before meal period
• Cook food items accurately to standard recipes
• Plate food items according to standard presentation style
• Assist in creating and preparing menu items and daily specials
• Monitor the quality and quantity of food prepared
• Assist other kitchen staff as need arises
• Supervise performance of kitchen staff to ensure proper activity
• Ensure that required standards are adhered to in the production and preparation of food – in quality, quantity and safety
• Ensure all complaints, inquiries, and suggestions by customers are attended to accordingly
• Promote good team spirit regularly
• Report the need for maintenance to appropriate staff

The Requirements:

• At least 3 years of relevant experience in F&B Industry
• Passion for food, someone who enjoys the process of food preparation and creating menus
• Possessing a strong business acumen, being efficient, and practicing cost-effectiveness
• Effective communication skills
• Ability to work with figures and manage budget
• Ability to cope under stressful conditions
• Strong leadership skills
• With expertise in Italian cuisine would be advantageous
• Capable of preparing delicious pizza and pasta dishes with skill and finesse
