The Banquet Operations Manager oversee and manage the hosting of banquets to provide customers with an excellent experience. Their duties include consulting with Head Chefs, determining the number of wait staff, and planning the layout and setup of venues to the highest level of guest expectations. He or she will also ensure adherence to federal, state and local regulations concerning health, safety, and other compliance requirements, as well as brand standards and local policies and procedures. He or she will report directly to Director of Culinary & Beverage Operation and/or F&B Manager.

The job responsibilities include the following:

DUTIES AND RESPONSIBILITIES:

· Achievement of budgeted food sales, beverage sales and labour costs.

· Achieve maximum profitability and over-all success by controlling costs and quality of service.

· Participation and input towards F & B Marketing activities.

· Control of Banquet chinaware, cutlery, glassware, linen and equipment.

· Completion of function delivery sheets in an accurate and timely fashion.

· Preparation of forecast and actual budget function sheets.

· Completion of weekly staffing and manpower scheduling.

· Supervise and co-ordinate daily operation of meeting/banquet set-ups and service.

· Maintaining the Hotel Bar control policies and completion of necessary forms.

· Follow proper purchasing and requisitioning procedures.

· Maintain records for inventory, labour cost, food cost etc.

· To assist in menu planning and pricing.

· Development and maintenance of all department manual & control procedures.

· Provides labour costing information where necessary.

· Staff training and development.

Requirements

The candidate should possess the following:

· Diploma in Food and Beverage, Hotel Operations or other related fields, with at least 2 years of related and managerial experience

· Experience in Hotel F&B Operations; Banquet Operations Experience.

· Experience in menu planning and menu engineering

· Excellent spoken and written English

· Strong interpersonal skills and communication skills, and experience in managing large complex teams

· Creative food and beverage professional with a can-do attitude and always keen to elevate and redefine the food and beverage offerings under his or her charge

Bartender

• Ensure that alcoholic drinks are served in accordance with the state and local laws, ordinance, rules and regulations.
• Know how to use bar equipment efficiently and safely.
• Help control wastage and costs by ensuring that daily bar inventory is kept.
• Maintain bar sanitation.
• Prepare drinks promptly.
• Accommodate taste preferences of individual guests.
• Keep control of the cash (if any), alcohol storerooms and other limited access areas.
• Demonstrate suggestive selling and up-selling.
• Keep proper inventory and requisition of bar stock.
• Make entries in the Bar Logbook.
• Always maintain professional confidentiality.
• Make sure that all products served are accounted for on the final bill before presenting it.

· Manage PO and SO: including releasing orders, liaise with Supplier /Contract Manufacturer on order commit/delivery, reschedule/cancellation, rebalancing, shutgate, buyahead and critical parts.

All commits and changes needs to be updated in SAP accordingly

· Check the new orders & hub orders & hub pulls transmitted by the Contract Manufacturer daily via a report downloaded from the system or email communication

· Create and complete in SAP. The information is provided by Client in a form of a data matrix in an excel spreadsheet.

· Coordinate with GCM/Supplier/Contract Manufacturer in resolving pricing and shipment discrepancy [if any]

· Perform order book reconciliation and send email to Supplier & Contract Manufacturer and post to BOX

· Perform price refresh for purchase order on monthly basis

· Buy/Sell Part number set up in SSA tool and SAP MDT

· Verify & update the sales order sell price in the system before forwarding shipment documents to logistics for processing

· Update the Dates of Supplies in the shipment documents to Logistics for processing

· Liaise with Freight Forwarders to arrange shipment delivery from Suppliers to Customers

· Maintain accurate and auditable records/database/documentation in centralize file

· Reports: Generate and publish all Operations [KPI] and Inventory reports into BOX (List of reports : WMS, Inventory, Uncommit, Handsfree, FBL1, Shutgate, GR/IR mismatch, shipment, DCF, GAP, OTD, OTA, measurement review report, price change report)

· Any other tasks requested by manager

· 90% of the orders are automated, 10% are manual orders (for fully manual, completion of order is about 10min, if partially manual, completion is 5min)
