You’ll be in charge of:

• Setting up and stocking up stations with all necessary supplies
• Setting up workstation with all the needed ingredients and cooking equipment
• Preparing food for service (mise-en-place)
• Checking quality of ingredients
• Monitoring stock and place order when there are shortages
• Cooking menu items
• Keeping a sanitized and orderly environment in the kitchen
• Enforcing strict health and hygiene standard and troubleshooting any problems that may arise

Key Responsibilities:

· Check the freshness of food and ingredients

· Supervise and coordinate activities of cooks and other food preparation.

· Develop recipes and determine how to present the food.

· Plan menus and ensure uniform serving sizes and quality of meals.

· Inspect supplies, equipment, and work areas for cleanliness and functionality.

· Control and direct the food preparation process and any other relative activities.

· Construct menus with new or existing culinary creations ensuring the variety and quality of the servings.

· Plan orders of equipment or ingredients according to identified shortages.

Requirements:

· Proven 3 years experience as a chef in an Indian restaurant

· Exceptional proven ability in kitchen management

· Ability in dividing responsibilities and monitoring progress

· Outstanding communication and leadership skills

· Up-to-date with culinary trends and optimized kitchen processes

· Able to cook varieties of Indian Authentic cuisines

· Must be able to work on weekends and public holidays if necessary

· Maintain professional grooming and appearance and act as a role model according to established grooming and appearance policy

· Different methods of cooking such as dry/moist heat cooking, grilling, broiling and etc

· Demonstrate sous vide method

· Excellent cooking skills and ability to multi-task

· Ability to thrive in a fast-paced environment and complete tasks responsibly

· Maintain workplace safety and health policies and procedures

· Responsible for food preparation, maintaining the kitchen equipment and utensils at utmost cleanliness and hygiene.

· Prepares and cooks according to standard operating procedures set by the company.

· Ensures consistency in taste, quality, quantity, temperature and presentation of each food served.

· Quick in food preparation and is able to cope with a fast-paced kitchen environment.

· Ensure minimum wastage in food preparation and washer duty.

· Ensure freshness of food ingredients and raw materials, keeping track of old and new items by rotating stocks.

· Clean food preparation area and kitchen equipment to ensure clean safe food handling practices.

· Any other duties as and when being assigned by Head Chef.

· 6 days work week. Every Sunday off

Job Description

Main Responsibilities

-Report to the Head Wok Chef

-Assist in the picking and preparation of food ingredients for the wok station

- Operate kitchen equipment such as buffalo chopper and handles knives

-Ensure the kitchen inventory is sufficient, cost-effective while maintain the quality of the ingredients

-Assist other Cutter member when absence or the workload approaches a more hectic pace

-Assist to marinate and season ingredients

-e-Procurement of stock supplies and update GRN

-Maintain discipline, cleanliness, hygiene of the kitchen area

-Ensure the consistency and the quality of food served in the restaurant

-Assist in managing discipline, cleanliness, hygiene of the kitchen area

-Assist in bi-monthly stock take

-Investigate customer complaints

-Participate in checking of all purchased supplies for quality and account for each delivered item

-Adhere to hygiene and safety standards

-Minimum 4 years of experience in a similar restaurant concept for Cutter 2 (Grade 3)

-Minimum 3 years of experience in a similar restaurant concept for Cutter 3 ( Grade 1)

Job Description & Responsibilities

This position is responsible for managing the kitchen operation with the direction of the Outlet Chef on day to day business of the outlet.

Primary

• Understands the company culture and exemplifies the brand style.
• Lead and demonstrate the basics (Smile, greeting, responding, organization, safety, house rule and others).
• Familiar the whole floor operation. Able to carry out the role of every floor position. (Host, server, cashier and others).
• Effective reporting and discussing with the direct report.

Secondary

• Oversee general day-to-day management & operational of the restaurant business.
• Respond to questions or comments professionally and efficiently. Report, discuss or consult with the Outlet Manager.
• Always ensure kitchen team members are following kitchen SOP manual; follow-up with new team members’ On Job Training (OJT) progress.
• Assist Outlet Manager for new team members recruitment and training.
• Ensure high food quality especially taste, temperature and presentation to deliver excellent dining experience to all customers.
• Ensure that all foods are served as fast as possible.
• Ensure kitchen stock keep fresh and follow FEFO (first expired first out) standard.
• Manage all kitchen stock for daily operation, and outlet food cost control. Assist on month-end stock take.
• Ensure kitchen cleanliness, and always keep the kitchen in excellent hygiene standards.
• Ensure kitchen housekeeping is carry on as scheduled.
• Understand and support hall operation.
