The Sommelier plays a crucial role in enhancing the guest experience, ensuring that each meal becomes an unforgettable journey with perfectly paired wines.
You'll be in charge of:
- Curate and maintain a strong wine programme that is financially sustainable and excites the guests of the restaurant
- Implement strategies to maximize wine sales and cost efficiencies on both the restaurant and retail channels
- Execute best-in-class wine service, keeping in mind guests' personal tastes and price preference to generate individualized wine profiles for guests
- Advising guests on wine purchases, collection building and on wine-related lifestyle topics
- Assist in managing wine & beverage purchasing, inventory, maintenance and reporting
- Foster strong relationships with wine suppliers to obtain high quality products and pricing
- Timely handling and resolving of guest complaints regarding the sommelier team, assists guests who have complaints that affect any other departments onboard the vessel
- Continuously conducts training sessions with his/her staff covering all aspects of service: warmly greeting guests by their names, properly taking their orders, practicing up-selling techniques, utilizing correct glassware and mixology, correct use of registers and properly serving requested drinks
- Must be able to conduct wine training to the staff
- Mentors, develops and provides on-the-job training to subordinates to strengthen their current performance and preparation for future advancement, to train and develop professional sommeliers
- Responsible of maintaining the wine list at all time
- Maintains sufficient inventory of Sommelier support items; such as glassware, bar checks, napkins, etc., to ensure an efficient operation according to company standards
- Works within his / her set cost budget, par levels, and adjust requisitions to avoid any possible over ordering
- Monitor beverage consumption and poring to reduce wastage and avoid unnecessary financial exposure
