SUMMARY OF THE JOB
Assisting the General Manager for the managing, planning, directing, controlling, coordinating, and participating in all activities in the following areas:
Guest Service
According to the service standard, service procedures and sequence in accordance with the operation manual.
Food
To have a consistent standard in the preparation, presentation and service of Food and Beverage products and at the same time maintains the quality of the products.
Ambience
Ensure that the ambience of the outlet is always maintained well and clean.
Cost Control
To monitor and to achieve the food and labor cost in accordance to the budget and improve on sales of the outlet while keeping costs at a minimum.
Training
Work closely with management team on the training program for all employees. Always be prepared to assign or trained new employees under any circumstances.
Communication
To provide guest’s feedback, recommendations or information on the quality and service on the Food and Beverages rendered to our guests. Enforced and monitored on the policy and procedures established by the Company. Responsible for the social media communication plan together with the 3rd party vendor.
MAIN DUTIES AND RESPONSIBILITIES
- Direct, delegate, control, co-ordinate and participate in all Food and Beverage activities such as:
Ø To ensure the preparation and presentation of the products are always consistent and that the quality are not compromised.
Ø To ensure a consistent standard in the service of Food and Beverages at the outlet and in all functions of the business in and outside to achieve guest satisfaction.
Ø Cleaning and maintaining outlet, work areas, tableware utensils and other materials and equipment used in the outlet.
- Appraise employee’s performance and production, correct mistakes, and inadequacies, ensuring that the quality and standards of Food and Beverages preparation and service are maintained.
- Train personnel according to established procedures, conduct meetings to discuss problems, present new ideas, correct mistakes, and inadequacies, give instructions and special assignments etc.
- Coordinate between different stakeholders to ensure that preparations for all functions, festivals promotion and other activities involving Food and Beverages have been made.
- To assist General Manager in preparing annual Food & Beverage goals or forecast and budget, develop working plans to carry out goals, compare actual achievements against goals periodically, and take necessary corrective action.
- Coordinate with General Manager in the preparation of the marketing plan, sees to the implementation of approved plans.
- Prepare the Food & Beverage monthly report detailing and explaining figures of sales, costs and profits and comparing same with forecast.
- Develop, in coordination with appropriate stakeholders, plans and strategies for selling Food and Beverages, such as new menus, special offers and promotional activities (e.g., food festivals, social media activities, etc.).
- Ensure that adequate inventories of Food and Beverages and equipment are maintained.
- Recommend revision in pricing of Food and Beverages items based on costs, competition, etc.
- Attend to major operational problems and needs, attends to guests’ complaints, inquiries and requests, answer correspondences.
ADDITIONAL TASKS:
Financial
- Drive profitability and maximize revenue opportunities
- Responsible for ensuring achievement or exceeding financial targets
- Ensure that all profitability is achieved
- Provide input and deliver effective information regarding sales forecast and review information
Human Resource
- Ensure all staffing levels are maintained to provide appropriate support to the operations
- Ensure all performance reviews are completed correctly
- Ensure that all Payroll and Paperwork has been correctly administered
- Identify and effectively manage poor performance issues
- To take responsibility for personal development activity
- Succession planning in conjunction with future new business outlet requirements
Legal/General
- To fulfill the responsibilities designated for the appropriate position in the “Responsibilities for Health & Safety” section of the company’s Health & Safety Policy and to execute all duties in a manner that conforms to appropriate Health & Safety Policies and procedures.
- Maintain all mandatory records and documentation and reporting in line with company and divisional requirements
- Compliance with legal and company Health & Safety requirements, auditing, and maintenance of all documentation
