DUTIES & RESPONSIBILITIES

· Sets tables, places clean cutlery and crockery on the table.

· Places clean cutlery and crockery on the table as per the prescribed standards.

· Ensures that table setting is uniform and tables and chairs are cleaned before they are set.

· Assists the Supervisor/Captain in seating guests.

· Greets guests courteously with a smile.

· Helps to pull chair when seating the guest.

· Pours ice water for the guest after seating the guest.

· Presents guest with the menu and attends to their needs.

· Takes guests’ order.

· Recommends food items that are on the menu and provides information on preparation methods and accompaniments when taking orders.

· Recommends guest for the first drink with the knowledge gained in beverages.

· Recommends food items to the guest and suggests that guest try recommendations.

· Serves food according to service procedure.

· Sets the table accordingly after orders have been placed.

· Ensures that food and drinks are served quickly and efficiently and with all the necessary accompaniments.

· Ensures plates are clean and not chipped or cracked.

· Checks against the order to ensure that the correct dish is served to the guest.

· Serves the lady first.

· Serves and clears food from the right.

· Removes dirty dishes and cutlery from the table.

· Clears the plates when the guests have finished.

· Stacks the crockery properly according to sizes and placed soiled cutlery separately on the tray.

· Stacks crockery, glassware and cutlery properly to ensure that the tray is well balanced.

· Ensures that there is sufficient mise-en-place at all time on the side station.

· Replenishes side station when stock items run low.

· Cleans and wipes all equipment before placing onto the side station.

· Replenishes condiments whenever required.

· Presents bill to the guest.

· Proceeds to close the bill only upon guests’ request.

· Checks the table number and items before presenting to the guest.

· Places the bill in a bill folder pad in front to the guest.

· Thank the guest for their patronage.
