Job Descriptions

The incumbent will be in charge of all kitchen related activities ranging from menu creation, plating design, kitchen staff management as well as inventory management. It is important for the incumbent to be knowledgeable and creative with various ingredients, coming up with new menus in line with the restaurant concept that would appeal to customers and help boost the name and sales of the restaurant. While establishing excellent standards of food quality and production, the incumbent acts as a controller in assuring consistency of all the products that leave the kitchen.

Experience in fine dining traditional Japanese sushi restaurant and fine dining cooked Japanese dishes. Other MICHELINstarred experience is highly preferred.

Job Requirements

• Minimum 15 years working experience
• Detail-oriented, dynamic, motivated, strong sense of responsibility
• Experience with sushi from mise en place to preparation and presentation is a must
• Experience in other high-end Japanese sushi restaurant
• Michelin-starred experience is an added advantage
• Able to work shifts, weekends and public holidays

Led by Chef Colin Buchan with extensive experience in London and Singapore working with Jason Atherton, Gordon Ramsay, Marco Pierre White, and Angela Hartnett.

Your Role:

• Assist the Executive Chef and Head Chef in all aspects of service and food preparation
• Uphold the standards of food presentation, production, and portioning
• Monitor the preparation of the dishes to ensure adherence to recipes and specifications
• Perform day-to-day kitchen activities efficiently
• Ensure a high standard of food hygiene at all times
• Guide, train, and supervise junior members
• Track inventory of food supplies and order supplies on a scheduled basis as determined by menu and estimated number of diners

• 3 to 5 years of relevant work experience (salary will commensurate with experience)

Key Responsibilities:

1. Assist in Menu Planning: Collaborate with the Chef in designing and planning menus based on seasonal availability, customer preferences, and culinary trends.
   
2. Food Preparation: Execute culinary techniques and recipes to prepare high-quality dishes consistently. Oversee and participate in the preparation of ingredients, cooking, and plating according to established standards.
   
3. Kitchen Management: Coordinate daily kitchen activities, ensuring a smooth workflow and adherence to established procedures. Manage inventory levels of kitchen supplies, monitor equipment functionality, and report any issues to the Head Chef.
   
4. Staff Supervision and Training: Assist in training and supervising kitchen staff, ensuring they follow food safety and hygiene protocols. Foster a positive and collaborative work environment, promoting effective communication and teamwork.
   
5. Quality Control: Monitor the quality of ingredients, finished dishes, and overall presentation to maintain high standards. Address any issues or discrepancies promptly and collaborate with the Chef to implement corrective actions.
   
6. Adherence to Health and Safety Regulations: Ensure strict adherence to health and safety regulations, including proper food handling, storage, and sanitation practices. Conduct regular inspections to identify and rectify potential safety hazards.
   
7. Customer Interaction: Collaborate with the front-of-house staff to address customer feedback and preferences. Occasionally interact with guests to gather feedback and enhance the dining experience.
   

Qualifications and Skills:

• Strong knowledge of culinary techniques, food safety, and kitchen management.
• Excellent leadership and communication skills.
• Ability to work efficiently under pressure and maintain a positive attitude.
• Creativity and innovation in menu development.
• Knowledge of local health and safety regulations.

Responsibilities

• Responsible for smooth kitchen production
• Assists executive chef in preparation and creation of menus
• Ensure adherence of all standard recipe cards from respective station
• Maintain high level of food presentation and standard food quality according to standard operating procedure
• Maintain & proper stock for the smooth running of operations
• Upkeep hygiene & cleaning of kitchen section
• Provide support ad hoc duties assigned by management & manager

• At least 1 year relevant experience in catering
• Passionate in culinary skills
• Flexible, ready to learn, able to multi task
• Able to commit long working hours, weekend and public holidays
