Main Duties and Responsibilities

• Plan menus for all outlets and work closely with the 'Culinary Committee' and Marketing for alignment.
• Schedule and coordinate the work of all kitchen employees and ensure efficient food preparations, manpower deployment, timekeeping and liaise with Chef de Cuisine, HR and/or other senior kitchen employees (if any), to assure correct food production and consistency is achieved.
• Approve the requisition of products and other necessary food supply at optimum cost and quality.

Job Description

· Monitor and maintain fleet marine operations status, Sourcing for Vessels when required, searching for business opportunities for chartering of available vessels, verifying and drafting of chartering agreement, Ensure delivery of vessel.

· In-charge of crew selection, conduct interviews, brief crews on the company’s policy and procedures

· In-charge of applying manifest and coordination of vessels going in and out of project site

· Handling Vessel Operations including physical Boarding documentations, clear vessels in/out of port with as little delay as possible, Prepare documentations such as port and immigration clearance, Declaration etc to relevant government statutory departments.
