Job Summary:
To supervise Food and Beverage staff, carry out financial reporting alongside with the Unit Manager, rotas and functions management. Maintain effective control of Food & Beverage Services on site. Responsible for preparing and/or cooking the Food & Beverage menu. Buying, ordering and basic stock control.
Principle Duties and Responsibilities:
- Monitor portioning and ensure quality food preparation to control food, beverage and other supplies costs.
- Communicate all inventory and supply needs to Multi Unit Manager and /or Head Chef on time to time.
- Ensure cleanliness of food outlet area; stock and prepare food items as required.
- Monitor cleaning rotation schedule on the daily basis. Implement and enforce FIFO at all times.
- Ensure that all F&B staff deliver excellent customer service and that they adhere to service standards.
- Ensure that F&B staff adhere to safety and general procedures as outlined in task list which is a site based daily routine works.
- Ensure the F&B service meets business needs and standards.
- Ensure all the machines (Chiller, Freezers) and snack cabinets are full and with stocks. And arrange for top up if needed .
- Ensure adherence to finance procedures from both from client & Employer
- Ensure tight control of stock and minimize wastage.
- Assist in the development and delivery of staff training which is consistent with business needs.
- Verify and supervise line staff and that work are prepared for the next day.
- Facilitate conflict resolution.
- To maintain a professional and claim behaviour even in difficult situations.
- Assist the team with service and other duties during high volume times (Breakfast & Lunch)
- Ensure the food label & the food are served as same any last minute changes to the menu dishes to be checked with the chefs immediately regarding the allergens & ingredients and to do changes immediately and get ready before the service for the streeters start.
- Any missing food or delay in deliveries to be reported promptly
- Complete daily & Weekly paperwork promptly (Temperature, Waste report from kitchen, invoices to the client, placing orders of the stocks, Inventory)
- Track and prepare all schedules to maximize productivity and keep labor costs within budget.
- Any other duties as may be required by the Multi Unit Manager which are strictly related to the site.
- Ensure legal requirements and standards related to Sodexo Food Safety and Workplace Safety and Health are implemented and adhered during the entire operational processes related to Food Services and its scope of activities.
- Ensure food safety procedures are adhered to by kitchen and service's team.
- Ensure only trained employees are deployed and have been briefed on their roles
- Any other food safety related tasks assigned e.g. temperature monitoring of food, storage and equipment, cleaning activities
